I would recommend Time Bandits and Titanic (on the big screen, if at all possible)
I finally did see Time Bandits (well most of it, I ended up missing part in the middle because I fell asleep -- not because I was disliking the movie but due to being remarkably tired when we started watching it).
Thought I'd throw another one out there . . . If you do see The Godfather and aren't overwhelmed, you might still want to check out Godfather II which is a much better movie (IMO).

you should see them all. I'm glad you have an interest in all the classics. Its good and bad you haven't seen any. Bad because you've missed out this long. Good, because you get to watch them for the first time with the freshness that i miss.
Undoubtedly everyone that posts in listology has seen more movies and read more books than I. So I was delighted to see a list where I have seen 6 of the titles you have not seen. Certainly seeing Citizen Kane and Psycho in my film class got those two before my eyes. That Star Wars one was on tv recently so I saw that because I could not get my arse out of the chair (damn Lazyboy chairs). Gone with the Wind I saw as a elementary school kid...the scene where she pulls the carrot from the garden...I so wanted that to be the end of the movie...gack it was long.
I feel similarly to listology47: I've actually seen 5 of these movies. Here are my comments on the 5:
Godfather - You MUST see.
Phantom Menace - Blah. You can skip it. If you want, I'll tell you everything that happens so that, if you're a big fan of "Star Wars", you'll know everything that happens without having to sit through this mediocre movie.
Psycho - Damn good movie, but I disagree with those who think it's Hitchcock's best. Still, you should definitely see it.
Truth About Cats and Dogs - It really wasn't anything special. Still, you could see it for some light laughs.
Eating Raoul - It's dark, bizarre, twisted, raunchy, and it sure is a lot of fun. I wouldn't call it a must-see, but do check it out whenever you have the time.
Godfather - yes, I must ;)
Phantom Menace - just to be a completist, but I haven't been enthused
Truth About Cats and Dogs - someone told me I had to see it, but I can't remember who
Eating Raoul - mostly because I own it but haven't ever gotten around to watching it (found it used and cheap)
Well, if you're going to be a completist, then you'll have to watch Attack of the Clones and Revenge of the Sith as well, but I wouldn't recommend it.
If Attack of the Clones was #2, I've seen it already... (yes, out of order)
I wouldn't rush to see The Truth About Cats And Dogs. It's cute but mainly because of Garofalo (who's really funny in my estimation). I thought it was a female Cyrano De Bergerac, which begs the question. Have you seen Cyrano 90?
Sadly Eating Raoul is nowhere as good as Diva. What is the connection you ask? 2 movies I wanted to see for a long time, one dissapointed the other floored.
